I have all v1 contact sensors because I prefer them.  Looks like if you want to use them for temperature monitoring you will also want to use v1 sensors.

Great experiment! As for battery effects, the sensor in one of my freezers has been reporting battery levels in the teens-low 20's ever since I put it in. But, it has been working for 160 days at those levels, so it seems to affect the accuracy of the battery level reported.
